An ambulance officer was also injured after the crash, which forced the closure of northbound lanes through the area.
The initial incident happened just after 11.30am when a police car was pulled over to help another car involved in a crash on the motorway at Currumbin, just before Stewart Road.
As the officer stepped out of his car, an oncoming vehicle hit him, in what was described by police as an accident caused by the wet weather.
The officer was taken to hospital in a serious condition, since downgraded to stable, with the victim suffering head and internal injuries.
Another patient as well as an ambulance officer were also injured and taken to hospital in stable conditions.
Northbound lanes of the motorway were closed, with traffic initially being diverted down Stewart Road before being directed to the Gold Coast Highway.
Australian Traffic Network spokeswoman Amelia Oberhardt said as a result, there were "pretty bad" five-kilometre delays through Bilinga and Tugun, just after 1pm.
