Wednesday (May 17) marked the first official day of evening service at the Hard Road Café which will Café will serve guests Wednesday to Sunday nights (5 - 9pm), with a selection of favourites like crumbed steak, curry, and fish & chips, alongside beer and wine.
Bakery owner Martin Josselyn, said the Hard Road Café won't shy away from flavour combinations and experimental cuisine and the team who brought the curried camel pie to the world have been busy perfecting a camel bolognaise.
“The camel bolognaise is delicious and outshines the traditional recipe. The meat falls apart like a good ragout should - tasting somewhere between beef and lamb, if I had to put my finger on it,” Mr Josselyn said.
"The Hard Road Café is about making honest food, served with outback hospitality, and that's what diners can expect.”
With a menu that rotates daily, diners can expect other delicacies like Birdsville Fried Chicken and from June visitors can expect to see Italian, German and French cuisine making an appearance on the menu.
For the first night of trade, the Hard Road Cafe served curry to a small crowd undeterred by the storms that hit Birdsville the previous night.
